Summer berry and banana muffins

This recipe is based on one I saw in Tesco’s food magazine. It was so easy, really quick and I had all the ingredients in the cupboard already. Great when you have a few bananas slightly past their best and quite healthy, I like to think, as they have no refined sugar in them. I doubled up on the recipe below and am going to freeze a few for snacking on the go.

Here’s my take:


  • 2 large, very ripe bananas, mashed
  • 1 beaten egg
  • 125ml sunflower oil
  • 250g plain flower
  • 2tsp baking powder
  • 75g blueberries
  • 75g raspberries


  • Set your oven to 160 degrees C and set out some muffin cases in a muffin tray
  • Mix the mashed banana, eggs and oil
  • Sieve in the flower and baking powder
  • Combine well
  • Add the berries to the mixture and place into the muffin cases
  • Bake for between 15 and 20mins – depending on how good your oven is
  • Done!

As there’s no sugar in these bakes they taste slightly more bready than traditional buns so I whipped up a bit of frosting using cream cheese and icing sugar – just enough to satisfy a sweet tooth. I served them with a few more berries and of course a coffee…
